Devour the Competition: Half smoke sausage sandwich

Devour the Competition is an initiative created by the Flik Hospitality staff to help the players prepare for the game through delicious food. The chefs prepare a meal during the week of the game that is inspired by the Eagles' opponent. To get ready for today's game against Washington, the chefs crafted half smoke sausage sandwiches.

INGREDIENTS

2 teaspoons granulated garlic

3 teaspoons granulated onion

2 cups beef stock

3 tablespoons chili powder

1 tablespoon paprika

1/4 teaspoon cayenne

1/3 teaspoon ground cumin

1/3 cup sugar

2 teaspoons salt

3 tablespoons tomato ketchup

3 tablespoons yellow mustard

2 cups water

2 pounds ground beef (80/20)

6 spicy Italian sausages or spicy beef sausages

6 hot dog buns

1 small red onion, finely chopped

Shredded cheddar jack cheese

PREPARATION

Crumble raw ground beef and place in smoker at 250 F and cook for 25 to 30 minutes.

Smoke sausages in smoker at the same time until fully cooked.

Whisk together water, beef stock, ketchup, and mustard.

Bring to a simmer over medium heat in a large sauce pot.

Break up smoked ground beef and add to wet mixture and slow simmer for 10 minutes, using a whisk to break apart beef.

Combine all dry spices thoroughly and divide into 3 separate portions.

Continue to cook beef mixture for 30 minutes, adding spice mix in every 10 minutes.

Allow chili to cook another 5 minutes and then check seasoning, adding salt if needed.

Split the six sausages and sear in hot frying pan until golden brown in and out.

Place sausages on buns and top with a generous amount of chili. Top with mustard, red diced onion, and shredded cheese to your liking.
